We’ve already established that I love ice cream and pastries. But what’s even better is ice cream and cookies!! And I’m loving this recipe I came across on Google+.
Snickerdoodle cookies are probably my favorite cookie next to chocolate chip. But I’ve never thought to eat them with ice cream. These Snickerdoodle Ice Cream Sandwiches from Javacupcake use a cinnamon ice cream to take these tasty wafers to another level.
Betsy, the author at Javacupcake, uses a cinnamon ice cream from a local ice cream shop in Germany, where she currently resides with her husband, an Army soldier (Thanks for your service!). If you are having trouble finding a cinnamon flavor, Betsy suggests adding cinnamon to your favorite vanilla ice cream. I personally love the cinnamon ice cream at Marble Slab, but it’s not always available each day.
Creating these sandwiches is an easy task. Layer the ice cream between two cookies. You can use the cookie recipe Betsy offers, or your own favorite snickerdoodle recipe. You always want to allow the ice cream to firm up again once the sandwiches are made. You can place them back in the freezer until the ice cream is the firmness you desire.
I can’t wait to try these sandwiches. Cookies and cinnamon ice cream!! It’s already making my tummy happy.
