Garlic Parmesan Roasted Potatoes
For our Sabbath lunch last week, I was required to find a side dish to compliment the rest of the meal. I wanted to find a recipe that did not require a lot of prep time or cooking. After all, it was the Sabbath, and we should refrain from labor on this day.
I found a recipe on Pinterest for Garlic Parmesan Roasted Potatoes (get recipe). I washed and pre-sliced the potatoes in half on Friday. And I placed them in water in the refrigerator overnight. I don’t recommend this. It caused the potatoes to be so cold, and they took longer to brown on Saturday. But overall, the recipe is really simple.
My godson is in the process of getting a Home Helper Award in Adventurer Club at church. One of the requirements for the award is to help prepare a meal. So once I had sprinkled the oil, cheese and herbs over the potatoes, I allowed him to assist in tossing it all together. He did a very good job and coated all the potatoes well.
Because the potatoes were still cold, it did take a little longer for them to brown. But they were fantastic. Not only were they beautiful to look at, the flavor was perfect. We ate them alongside some fresh green beans and vegetarian meatloaf. And my lil man was feeling very proud of himself for helping make the meal. Now I just need to find a dessert for this Sabbath’s lunch.
