Mixed Greens and Berries Salad with Poppy Seed Vinaigrette Dressing {Guest Post}

I’ve had berries in a salad before, but not quite like this.  This guest post, by Sue Mertl, uses fresh berries, apples and greens to create a beautiful salad.  Sue tops it off with a tasty salad dressing.  Be sure to check out Sue’s blog, The Chelsea Project for more of her creations.  See her information below.  Enjoy.

Nothing says fresh quite like fruit atop salad greens.

This is especially true when the fruit is primarily fresh berries.

Depending on where you live, fresh berries are entering their peak seasons. This recipe, created by Yours Truly, is so easy and extra special because the fruit combinations can be switched out according to the seasons and personal preferences. And, it’s the perfect time to grab the goodies at the market or head out to pick your own.

Begin by lining a bowl with about 4 cups of your favorite greens. I like the crunch of Romaine lettuce mixed with the richness of fresh spinach.

Then, just start piling on the flavor……

……chopped Golden Delicious apples, strawberries, and blackberries….

….then add chopped green onions or scallions…

…..then croutons…. Love the crunch…and blast of salt.

…..add a handful of sunflower seeds for heartiness and texture…..

…..and toss with a one-to-one combination of light raspberry vinaigrette and light poppy seed dressings. Then top with a sprinkle of shredded Parmesan cheese.

Ingredient Review:

Romaine lettuce – 2 cups in bite size pieces;  Spinach – 2 cups in bite size pieces;  Strawberries – 6 to 8 big beauties;  Blackberries – about 3 ounces – 8 to 10 berries;  Yellow Delicious Apple – one whole – diced with the peel on;  Green Onion – one or two whole shoots diced;  Croutons – your favs – just toss some in;  Sunflower Seeds – a handful will do;  Shredded Parmesan Cheese;  Lite Poppy Seed Dressing;  Lite Raspberry Vinaigrette
