
Pumpkin Roundup #2 2018: Breakfast
It’s time for another pumpkin roundup!! <insert applause and cheers> Today’s roundup is all about breakfast. Breakfast is my favorite meal of the day, other than dessert. Is dessert a meal of the day? Well, for me it is.
Anyways, I love breakfast. My day is not complete without it. It’s that source of fuel that helps me get started on my day. So I definitely wanted to include breakfast in my roundup as I did before.
In this roundup, there are breakfast foods that should be pleasing to everyone. I admit that I had to include some pastries. It wouldn’t be a proper roundup without them. So, grab some coffee or hot chocolate and see what you’ll be adding to your breakfast lineup.
Third to muffins and waffles, French toast is one of my favorite breakfast foods. That thick slice of bread coated in custardy goodness, bathed in maple syrup! Excited, yet? And this recipe from Life Made Simple takes it to another level with the pumpkin spice that you’ve come to love and a dollop of whipped pumpkin butter. What!!! I cannot wait to try this.
Cranberry Pumpkin Overnight Oats with Cinnamon Cashew Cream {Vegan}
The authors over at Cotter Crunch are offering up a hearty bowl of overnight oats. Overnight oats have become a very popular morning meal. Overnight oats can be prepped ahead of time, which makes it easy to grab and go in the mornings. This recipe is vegan, and incorporates a cashew cream. What a nice way to enjoy a vegan breakfast!
Looking for a flaky breakfast treat? Try this pumpkin recipe from The Novice Chef. Simple ingredients like puff pastry, pumpkin, and pumpkin spice come together to create this beautiful twisted treat. I am a sucker for a pastry, so I will definitely be adding these to my fall breakfast lineup.
Easy Cinnamon Pumpkin Cake Muffins
This roundup wouldn’t be complete without my favorite breakfast food: muffins. And I have two recipes to share with you. This first recipe gives you a muffin with the feel of cake, all with a dusting of sweet cinnamon goodness. Get the recipe at Moore or Less Cooking.
Pumpkin Cream Cheese Swirl Muffins
And last, but not least, and probably my fave in this roundup! I’m not a big fan of cream cheese. It is very rich. But I can handle subtle amounts of it, which is the case with these muffins. That subtle cream cheese swirl adds texture and dimension of flavor to a baked treat. These muffins, also from The Novice Chef, should be a showstopper on any breakfast menu.
