Pumpkin Roundup #4 2018: Dinner

I love when a fruit or vegetable is so versatile that it can be used in both sweet and savory dishes.  We continue the pumpkin roundup with some great dinner recipes.  And there is something for everyone!


There is a classic dish of risotto.  Burgers lovers and vegans will be satisfied.  And lovers of Indian cuisine will have something to be excited about as well.

Creamy Vegan Pumpkin Risotto



Risotto is a classic Italian dish, and one that is very technical in its preparation.  This vegan recipe by Chocolate Covered Katie, adds pumpkin to give it more depth and creaminess.  You can even substitute brown rice if  preferred.
